Nestled in the picturesque Tulbagh valley you will find the striking architecture of Saronsberg Cellar. The cellar is contemporary building with a beautifully finished tasting room. Earthy textures were combined with contemporary touches in this spacious area from where visitors have views into both the hi-tech fermentation cellar and the maturation cellar. The view of the Saronsberg mountain from the lawn in front of the cellar in mirrored in the water of a dam at the edge of which is a 2.,5m sculpture by renowned artist Angus Taylor. Winemaker Dewaldt Heyns and his team are passionate about every aspect of the wine-making process, which is quite unique and labour intensive. Firstly, the grapes are force-cooled directly after picking to retain the subtlety of the flavours. Destining and berry sorting takes place by hand on vibrating stainless steel tables and then grapes are gently crushed and deposited into the tanks by means of satellite tanks. This process enables them to produce concentrated, full-bodied and fruit-driven wines, all of which have received numerous awards.
